Work Week Menu Plan: The It’s Too Hot to Cook Version

The temperature has been extremely hot here with a heat index above 100 degrees some days. I took my boys to the pool yesterday and they had to close the pool since the water temperature was too hot. Now that’s hot!

Our menu plan this week reflects my desire to keep the oven off. I will be using the grill and we have two sandwich meals planned.

Monday- Quiche (From Freezer)

Tuesday- Angus Burger (I am participating in a Twitter Party for WineTwits and Georges Duboeuf. If you are on twitter join us with hashtag #GDandBurgers

Wednesday- Roasted Eggplant Pesto Toasted Sandwiches (Grill eggplant instead of roast in the oven.)

Thursday– BLT Sandwiches & Pasta Salad (We have a lot of ripe tomatoes from the garden!)

Friday– Eating out with family!
