Menu Plan Monday: Clean as You Cook

It’s time for the weekly menu plan! Last week worked out pretty well- I only had one minor change due to the need to reduce cholesterol. My pantry and freezer are still well stocked- no need to buy much this week besides the perishables.

My tip for cooking this week is to clean up your mess as you cook. Use a can, bag or box from an ingredient you are cooking with to collect the trash. I can’t stand having trash all over the counter! Since we have chickens, I use a plastic container to collect produce scraps in. If you don’t have chickens, use to produce scraps in a compost pile.

Dinner Menu:

Monday – Chicken Fajitas and beans

Tuesday – Pork Lo Mein (Use leftover pork roast)

Wednesday – Spaghetti & Meatballs, Green Salad (Use whole grain noodles)

Thursday – Caprese Pizza (substitute turkey bacon for pancetta)

Friday – Leftovers

Saturday – Slow Cooker Whole Chicken & Mashed Potatoes (make extra potatoes for the freezer)

Sunday – Slow Cooker Chili
