Give Every Night New Flavor: Chicken Enchilada Skillet Recipe

You all know that my work week is very hectic. I need easy and quick meals to keep our schedule running smoothly. I am really enjoying the Give Every Night New Flavor generator. The meals can be made in under 30 minutes and are based on ingredients that are reasonably priced. Plus ConAgra Foods and Kroger released new eCoupons to go along with these recipes!

Since my parents are visiting I asked them what type of food they would be interested in- Italian, Tex-Mex, American or Asian. My step-dad enjoys a lot of flavor in his food so he picked Tex-Mex. I plugged in Tex-Mex, Under 30 minutes and Serve 4 or More into the recipe generator. Up popped a list of recipes! My eyes were immediately drawn to the Chicken Enchilada Skillet. I like enchiladas but they can be time consuming to make. This recipe looked pretty easy and quick.

Chicken Enchilada Skillet

The nice thing about this recipe is that there are only 6 ingredients! I headed to Kroger and picked up the items I didn’t have in my stockpile.

Chicken Enchilada Skillet

PAM® Original No-Stick Cooking Spray
12 corn tortillas, torn into bite-size pieces
3 cups shredded cooked chicken (3 cups = about 12 oz)
1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
1 can (10 oz each) Rosarita® Enchilada Sauce
1 can (8 oz each) Hunt’s® Tomato Sauce-No Salt Added
1 cup shredded Cheddar and Monterey Jack blend cheese, divided

Spray large nonstick skillet with cooking spray. Add tortilla pieces and chicken; mix well. Cook over medium-high heat 5 minutes or until hot, stirring frequently.

Combine undrained tomatoes, enchilada sauce and tomato sauce in medium bowl; pour over chicken mixture in skillet. Mix well. Sprinkle 1/2 cup cheese over chicken mixture. Cover skillet; cook 5 minutes or until hot, stirring occasionally. Sprinkle with remaining 1/2 cup cheese. Serve immediately.

The only change I made to the recipe is that I used fresh chicken. I do not like to use the packaged precooked chicken due to the preservatives. This added a few minutes to the recipe cooking time but I was still able to make this under 30 minutes!

This recipe was full of flavor! My parents really enjoyed it and will be adding it to their favorite recipe list. It was a little spicy for my oldest son, Capt. M, but my little guy, Mr. B liked it.

  1. Isn’t this such an easy recipe?! My biggest complaint when doing traditional enchiladas is the messy hands. This is minimal mess and so easy! We actually omitted the enchilada sauce because my kids always think it’s too spicy and it still tastes delicious.

    P.S., your last picture looks like a hidden Mickey.
    P.P.S, you will only get that last reference if you are a Disney Resort enthusiast, lol.

      Yes, this recipe was so easy and will become a favorite at my house. I never saw the hidden Mickey until now! Sharp eyes you have!

  2. OK, it took me a couple of minutes, but now I definitely see the hidden Mickey. (-: We looked for those too in Disney World. This sounds like a quick and easy meal! We never have enchiladas b/c our kids are so young, but this they would not have to cut up. I think I have all of the ingredients already too. Thanks for the dinner suggestion!
