Strawberry Ice Recipe {Easy Frozen Treat}

Strawberry Ice

Over the weekend we went strawberry picking. The berries were plentiful! The one thing about strawberries is that they don’t keep for long. I made two batches of jam, froze some and we ate a ton. In order to preserve the rest before they went bad I made Strawberry Ice.

Strawberry Ice Recipe

5 Cups Fresh Strawberries
2/3 Cup Sugar
2/3 Cup Water
1/4 Cup Lemon Juice

Wash and hull strawberries. Place strawberries in a blender or use a hand blender to puree them. Add lemon juice to pureed strawberries.

In a saucepan, mix water and sugar over medium heat. Cook until sugar dissolves completely and mixture comes to a rolling boil. Remove from heat and let cool for a couple of minutes. Add sugar syrup to strawberries and mix well. Pour mixture in a shallow pan and freeze.

Tips

  • Place strawberry mixture into popsicle molds before freezing! Your kids will love these!
  • Try this recipe with other fruits. I don’t know the exact calorie content but it sure beats real ice cream!
