Work Week Menu Plan: Planning Ahead

This week I am on a roll. As our busy schedule continues, I decided to get a bit more organized with out menu plan. On Sunday evening I started preparation for three meals. One of those meals we actually ate on Sunday so technically that doesn’t count for this week! It took me about an hour and 20 minutes to prepare our Sunday meal (steak, corn on the cob, rolls and chili), (2) Quiche and chicken breasts for other meals. Oh, and I made homemade pie crusts for the quiche!

I feel accomplished and less stressed going into the week!

Quiche

Monday- Quiche (I made turkey sausage and cheese quiche. The turkey sausage links were on mark down at Kroger for $1.50. I cooked up extra for quick breakfast burritos this week. One Quiche will be frozen for a future meal.)

Baked Chicken

Tuesday- Chicken Enchiladas (Chicken already cooked. Should take just a few minutes to assemble the enchiladas. The rest of the chicken will be used for salads for my lunch.)

Wednesday- Pork Chops, Vegetable Couscous

Thursday– Hot Dogs and Green Salad

Friday– Chicken, Cucumber Salad and  Sweet Potato Fries
