Cauliflower Pizza Casserole Recipe

Craving pizza but cutting down on carbs or just in need of a few extra vegetables in your meal plan? Check out this recipe for a delicious little casserole that makes fulfilling a pizza craving entirely guilt free! Cauliflower is one of those amazing vegetables that can be used in so many dishes. It easily takes on new flavors with the addition of spices.

One of the kitchen tools you will need for this recipe is a use a food processor. The cauliflower should be steamed and then processed with the spices and cheese in a food processor. You don’t want to make a puree, but you do want the major lumps and bumps blended out.

To vary this recipe, use other pizza toppings. Substitute sausage or Canadian bacon for the pepperoni to change up this recipe. Of course you could make it completely vegetarian too by adding roasted vegetables!

Ingredients
  • 1 head of cauliflower (trimmed, washed, steamed & cooled)
  • 5 fresh basil leaves
  • 1 tbsp. minced fresh garlic
  • ¾ tsp. sea salt
  • ¼ tsp. black pepper
  • ½ cup freshly grated Parmigiano-Reggiano cheese (divided; or other desired cheese)
  • 16 pepperonis (less or more depending on preference)
  • Italian or Sicilian seasoning (garnish)
Instructions
  1. Preheat oven to 350 degrees F.
  2. Prep and 8x8 baking dish with cooking spray, set aside.
  3. Place steamed cauliflower, basil leaves, garlic, salt, pepper and ¼ cup of cheese into the bowl of a food processor and blend until the consistency is free of large chunks and smoothing out but not completely pureed.
  4. Spread in the bottom of the baking dish, sprinkle on remaining cheese, top with pepperonis and sprinkle with desired seasoning.
  5. Bake for 15-20 minutes until cheese is brown and bubbly.
  6. Serve & enjoy! Yields 4-6 servings.
Notes
Fold in chopped spinach, mushrooms or peppers before baking.

Top with fresh mozzarella or goat cheese crumbles for variety.
