How to Freeze Bell Peppers

I haven’t written about my garden in several weeks now. I was traveling a lot during the hottest part of the summer. That meant my garden had little care. I lost a lot of the plants but I still have peppers coming in strong. Red and yellow bell peppers are expensive. I have been freezing the extra bell peppers to preserve them for use in stir fry later this winter.

Bell peppers are really easy to freeze. When choosing bell peppers to freeze, look for peppers that are crisp and fresh. Just wash the pepper and slice in half. Cut out the seeds and stem. Slice the pepper into strips. Place the pepper strips on top of waxed paper on a baking sheet. Place in the freezer for a couple of hours until pepper stops are frozen.

Once the strips are frozen, remove from baking tray and place in a freezer bag. Make sure to remove excess air to help prevent freezer burn.
