As the summer days are slipping away from us, we are packing in as much fun as possible. This weekend we went to the home opening high school football game, spent the day at King’s Dominion amusement park and the boys attended a friend’s birthday party.
Even though we were on the run, it did manage a little cooking Sunday evening. I precooked chicken for enchiladas and made a big pan of lasagna. I also made frozen yogurt pops for the boys. Since we have a ton of eggs, I also sauteed vegetables with scrabbled eggs to make breakfast burritos this week.

Monday- Lasagna, broccoli
Tuesday- Chicken Enchiladas
Wednesday- Slow Cooker Chicken (shred and make tacos)
Thursday– Hamburgers and Potato Wedges
Friday– Eating out
