How to Keep Farm Fresh Eggs Fresh

Our hens have been keeping us well supplied with eggs this year! Since we have so many farm fresh eggs, we have started selling a few dozen each week. Farm fresh eggs will last for a long time in the refrigerator. We do refrigerate our eggs so that they will keep longer. However, if you are going to use fresh eggs often and they have not been refrigerated previously, they don’t need to be refrigerated. They will only be good for about two weeks without refrigeration though.

Since we do refrigerate our farm fresh eggs, they will last a good two months. The one rule of thumb we have is to not wash our eggs before we refrigerate them. When eggs are laid, there is a natural coating on the egg called a bloom. The bloom protects the egg from bacteria by sealing off the pores on the egg. If the egg is washed, the bloom with be washed off making the egg susceptible to being spoiled. The bloom also prevents the loss of moisture since the pores are sealed.

We just wash our eggs right before we are going to use them. Most of the time when we collect the eggs from the hens the eggs are clean. On occasion there will be some debris stuck to the egg. In this instance, we will wash the egg and use it first.

If you are buying farm fresh eggs and they haven’t been washed, your eggs will keep for about 2 months! If you have any doubt on whether your eggs are fresh or not, you can always do the dunk test. This simple test will tell you if your eggs are bad or not.
