Spring Salad + Manager’s Markdown at Stores

What better way to celebrate spring than with a spring salad!?! I (Litsa) tossed this salad together for a quick Saturday lunch. I’m on a 40 day fast for Greek Orthodox Easter. Thus, it is a challenge to stay full without all of my normal foods. However, these vegetables, fruits, seeds, and more work when paired together just right!

Today’s salad included romaine lettuce from Kroger’s produce department! Although I have never found a romaine lettuce coupon, I have discovered that if I shop at our West TN Kroger early in the morning I am sure to find a deal on fresh lettuce—three heads of lettuce for only $1.19 a bag. Look for these “manager special” stickers at your local Kroger!

Diced Apple with Skin
Spectrum Ground Flaxseed (Buy on Amazon)
Chia Seeds
Fresh Strawberries Diced

a touch of Raspberry Vinaigrette Lite Dressing (Kroger Mega Event)
honey wheat dried toast
