One staple in our kitchen is OLIVE OIL. We use it in salads, “fry” homemade fries in it, saute eggplant and zucchini in it—or green/red/yellow/orange peppers!?! We cook breakfast pork chops in it. We use it when cooking lentils, spaghetti, chicken, peas, and more!

Olive oil is used in most Mediterranean foods. Thus, we are always buying olive oil. My parents (Litsa’s) often bring me a can of olive oil when they visit or ask me if I need any when I visit. And for Christmas!?! You guessed it! I received a can of olive oil.

It is a staple for our family! How about you? Do you shop for olive oil!?!

“You’ve probably heard that a diet rich in olive oil can improve heart health, but did you know that reading the bottle label (extra virgin, please!) is key to reaping those benefits? Recent research has shown that the freshness of oil makes a big difference.

Look for a harvest date or an expiration date on the bottle. The fresher the oil, the better. To keep your olive oil, the better. To keep your olive oil fresh for as long as possible, store the bottle away from direct heat and light—so not next to the stove but in a dark, cool, cabinet. Use within 6 months of opening!”

Do I have a favorite!?! No. I just enjoy olive oil infused with the flavors of the Mediterranean Diet!
