Work Week Menu Plan: Easy Meals

The days are getting longer and that means there will still be some daylight when I get home from work- yeah! This also means that the boys will want to play outside. Capt. M starts baseball this week as well. As our schedule gets busier, the meals get easier!

I am still primarily making meals from items in our pantry or freezer. I did shop a bit this weekend for produce, dairy, corned beef and a few stockpile items. I spent around $36 which is not bad for the amount I brought home!

Monday- Pork Stir Fry (use leftover pork from Sunday)

Tuesday- Quiche (we have an abundance of eggs from our chickens)

Wednesday- Baked Spaghetti

ThursdayCorned Beef, potatoes, carrots, coleslaw

Friday– Grilled chicken and pasta salad

    • Hi Faith,
      I use Italian dressing, cheese, cherry tomatoes and whatever else I have! Sometimes I add bacon or hard boiled eggs. It varies but I prefer the Italian dressing over the mayo baed pasta salads. How do you make yours?
