Sun Dried Tomato Quinoa Recipe

Our Try Something New last week was quinoa. I made this simple side dish to accompany a pork loin. Really you could add different vegetables and seasonings depending on what you have on hand.
Tips
- Make it vegetarian by using vegetable broth instead of chicken. You could also use water if you are out of broth.
- Try using different spices like thyme, rosemary or curry.
- Add a cooked skinless boneless chicken breast to make this dish a full meal.
