Two Ways to Preserve Herbs

As the weather changes to cooler temperatures, many parts of the country will be unable to sustain outdoor gardens. If your herbs are planted outdoors, there are two ways you can preserve fresh herbs. Of course if your herbs are in portable pots, you can always bring your herb garden inside.

Dry Oregeno

The first way to preserve fresh herbs is to dry the herbs. To dry herbs you can either use a dehydrator or simply hang the herbs up to air dry. Before drying the herbs, make sure to wash them thoroughly. Use the homemade produce wash for washing herbs.

Basil Pesto recipe

The second way to preserve fresh herbs is to freeze them in olive oil. The easiest way to do this is to use an ice cube tray. Fill the ice cube tray with olive oil and then add chopped fresh herbs. Place the full tray in the freezer. When the olive oil is solid, transfer the herb cubes to a freezer bag or container. When you want to use herbs in a recipe, just throw the whole olive oil herb cube in a saute pan! The herb cubes are great for sauteing vegetables or poultry.

If you have a lot of basil in your garden, remember that you can make basil pesto using the ice cube tray method!
