Work Week Menu Plan: Using the Grill

I didn’t do a whole lot of cooking over the weekend since hubby was away. My meals were pretty simple- a lean meat and veggies and the boys requested hot dogs and mac & cheese for Mr. B’s birthday dinner. This is the time of year where I use the grill a lot. I love, love, love grilled vegetables! Hubby likes grilled vegetables too and since I normally have to encourage him to eat veggies, I can see that we will be having kabobs a lot.

Monday- Boys and hubby will haveĀ Homemade turkey meatball subs, I will have leftover mahi mahi and sweet potato fries. (Meatballs in freezer.)

Tuesday- Grilled Turkey Breast, Mashed Potatoes (in freezer) (I will probably have a salad instead of mashed potatoes)

Wednesday- Grilled Pork Chops, Pasta Salad, Grilled Vegetables

Thursday– Turkey Sandwiches with Cranberry Sauce

FridayStir Fry with Leftover Pork Chops
