Work Week Menu Plan Week of 2/2/15

We had a busy weekend traveling to West Virginia for our first karate tournament of the year. Capt. M did awesome winning gold medals in both kata (form) and kumite (sparring)! We are so proud how he handled the first tournament as it is a bit overwhelming. I competed as well and ended up having to compete in the advanced women’s division since there was no one in my beginner division. Although I was disappointed with how performed, I learned a lot. As they say, the best way to learn is to fail!

I did get some cooking done on Sunday to prepare for the week. I made green juice for my snacks for the next three days. I also made quinoa that I will use to make salads with for lunch this week. Having the grains precooked really helps on busy days. I was craving chocolate so I made this Chocolate Banana Cake again. It is so easy to make and super moist! My boys love it too!
