Thanksgiving Leftover Recipe Makeover Ideas

The one thing about Thanksgiving is that there is usually a ton of leftovers! If you are like me, you get bored of leftovers easily. It’s time to makeover your leftovers! Here are some ideas:

Turkey Enchiladas (Just replace the chicken with diced turkey.)

Turkey Enchilada Skillet (Just replace the chicken with diced turkey.)

Turkey Chili Chowder (Just replace the chicken with diced turkey.)

Turkey Pot Pie (Just replace the chicken with diced turkey.)

Shepherds Pie (Use leftover mashed potatoes and turkey.)

Ham & Bean Soup (Use leftover ham bone or diced ham.)

Ham & Pea Carbanera (Use leftover ham.)

Calzones (Use leftover ham.)

Sweet Potato Pancakes (Use about 1 cup of leftover sweet potato casserole.)

  1. Here are a few ideas that we will be using our left over turkey for:

    We have been eating our favorite subs – inspired by a sub shop in DE called Capriotti’s : Here’s what Wikipedia says about it: “Capriotti’s signature sandwich, the Bobbie, is a sub consisting of turkey, cranberry sauce, stuffing, and mayonnaise.” I say it’s like Thanksgiving dinner on a sub roll – however, even if you don’t like cranberry sauce (we use the whole berry with some mandarin oranges and walnuts mixed in) it is a *must* and makes the sandwich!!

    Lastly we will be making some turkey soup to put up for later (great for a quick lunch), remake some chicken n dumplin’s with already cooked turkey (and b/c the turkey is already cooked, this goes together *quickly* )

I remember my grandma making this (though she rolled and cut the dough by hand to make the slippery dumplin’s – just glad I learned an easier way to make them~) and then of course just freezing some turkey for later!
