Work Week Menu Plan: Travel Trail

I am getting ready to travel this week so that means hubby will be doing his share of meal prep! One thing I try to do is prepare a few things before I leave. He can easily make side dishes to go with the main course meals I make.

Monday- Pork Tenderloin with Roasted Plums, brown rice, carrots (We had excess plums so I prepared the roasted plums and reduction sauce yesterday. Hubby will put the tenderloin in the oven before I get home from work.)

Tuesday- Beef Stroganoff, green salad

Wednesday- Dill Chicken Salad Sandwiches (Chicken cooked Sunday)

Thursday– Beef Tacos (Make extra beef on Tuesday)

Friday– Pizza
