Work Week Menu Plan Week of 3/16/15

I spent two hours in the kitchen Sunday prepping for dinners this week. Although it makes for a really busy Sunday (and a really messy kitchen!), prepping ahead is a huge help for the week. I made homemade pasta sauce, roasted cauliflower, roasted spaghetti squash, creamy cauliflower sauce, cooked Italian sausage and beer brats. Although I don’t have complete meals, I have the main ingredients cooked are ready to go! Some of these items will also be used for my lunches such as the roasted cauliflower.

Reuben Sandwich

Monday- Spaghetti (using pasta sauce I made), french bread (I will have spaghetti squash while the boys have whole wheat pasta.)

Tuesday- Corned Beef, coleslaw, potatoes

Wednesday-  Leftovers (Maybe Reuben’s if we have leftover corned beef)

Thursday– Grilled chicken and vegetables with cauliflower sauce (This sauce tastes cheesy but there is no cheese. It is really good!)

FridayHomemade Pizza (use cooked sausage)
