Work Week Menu Plan Week of 10/27/14

It’s Halloween week! I had a bit of anxiety this week as I realized that Thanksgiving is just a month away! Time is seriously flying by! My boys finished up soccer season with a championship win on Saturday! Our schedule will free up a bit with the end of soccer although we will most likely add more karate days. We are just a sports loving family and can’t help but stay active!

I did get a bit of cooking done this weekend to help with our busy schedule. I made homemade chicken nuggets for easy meals for the boys. I also made pumpkin puree for pumpkin bread and cookies. Pumpkin cookies will be our dessert this week!

Monday- One Pot Tomato Basil Pasta

Tuesday- Chicken Fajitas

Wednesday- Homemade Pizza (this has become a regular Wednesday night dish!)

ThursdayBreakfast burritos (we have a ton of fresh eggs to eat)

Friday– Snakes & eyeballs (Our traditional Halloween meal of spaghetti and meatballs!)

  1. Snakes and eyeballs – lol! We try to do something spooky on Halloween too. This year I’m making “roast beast and monster cheese” sandwiches (aka roast beef and muenster cheese).
