Work Week Menu Plan Week of 8/3/15

Can you believe it’s August? This is the last week before our boys start school! My plans for cooking this weekend were foiled with a foot injury. The xrays determined there isn’t a break but the amount of swelling kept me off my feet! I managed to get a pan of enchiladas made and some fresh salsa that will be used for lunches. Other than that, it was just too much for my foot to stand in the kitchen. Thus, we are back to easy meals this week!

Thankfully my foot doesn’t hurt as much as it looks like it should. Don’t get me wrong, it’s sore. But the colors and swelling make it look 10x worse! Should be interesting to watch it change colors this week!

Monday- BLT Sandwiches, corn on the cob (We have an excess of tomatoes from the garden!)

Tuesday- Turkey Burgers and Avocado Corn Salsa (use leftover corn from corn on the cob)

Wednesday- Spaghetti

ThursdayBaja Fish Tacos

Friday– Apple Butter & Sage Grilled Pork Chops, Grilled Potato Packet
